I Kiss Better than I Cook

Hello loves. I need some help. I potentially may be making dinner on Saturday night, and I am not the best chef around. Plans are still getting ironed out so I hopefully won't be, but just in case I want to have something ready to go. So I need your help. What should I make?

Now, here is the kicker: one of us does not like when food touches, any sort of sauces, and hates veggies. The other is a vegetarian and that includes fish. And you all know this girl would eat bacon wrapped in bacon, so you can guess which is which.

Last time I cooked for him I just plopped some trader joes gnocchi in a pot with some sauce and some sides, but I don't think I want to go the past route again. So lay them on me. Doesn't need to be fancy, don't worry about desserts( I am totally planning on cheating with Starbucks cake pops)

In an unrelated note, is this not the cutest wine label ever? I wish it wasn't s screw top bottle though!

  2. What about eggplant parm? You can bread the eggplant slices ahead of time, then pop them in the oven with the cheese and sauce 45 minutes before dinner. This means you could, in a similar baking dish, do chicken.

For dessert, have half a banana chopped for every person. Place slices in a ramekin (or all in one bigger baking dish. Put a few thin slices of butter in each ramekin. Put a tablespoon of brown sugar and a touch of regular sugar on top. I also like to had dashes of cinnamon. Add chocolate chips on top. I bake at 300 for as long as I please. Half way through the bake time I to mix up the butter. Usually I add the chocolate chips then and when they are melty it is ready!

  3. i am vegetarian too, so maybe i can help you with the vegetarian dish that meat lovers like too - take one onion and make it golden in hot oil. at that point take chicory and mix it with onion. after about 5 minutes put the rice in (depends on how many people you're cooking for - i'd say 1 dcl per person...) and mix it together for a minute. put 1 dcl of red wine on 1dcl of rice in it - i suggest refosco wine (do not use sweet wines) and add a bit warm water when it boils for the first time. do not over cook the rice. :)
serve warm with a bit of parmeggiano cheese.
    it's to die for.

  4. I'd say my recipe for eggplant lasagna is a total hit - and totally vegetarian. it's awesome because it tastes like meat {for the bacon/meat lover ;)} but is completely vegetarian friendly. if you need the recipe/help call me. I'll email it to you/walk you through it.

    love your face.

  5. The easiest meal ever is angel hair coated with a butter/EVOO sauce with sauteed mushrooms and a few cloves of garlic. So yummy!

  7. oooh so who's coming to dinner?? wink wink

ummm. i was just going to suggest a pasta dish like stuffed shells (which is super easy, just a little time consuming your first time). What about chili rellenos? I have a GREAT recipe, but it calls for eggs.

  8. We had a fun night with friends thanks to a suggestion from the Barefoot Contessa herself. Make your own pizzas. Buy or make small balls of pizza dough. Prep bowls with various pizza toppings and let people assemble their own. We had appetizers, salad and vino while the pizzas baked. We rated each one and the maker of the winning pizza got a bottle of wine!
